Add two packets of yeast to one cup of lukewarm water (generally around 100 degree Fahrenheit). Stir with a fork for a minute or two to dissolve the yeast. Let stand for 5 minutes. In a separate bowl, add 3 1/2 cups of sifted flour, 2 tablespoons of sugar, and 1 tablespoon of salt. Stir to combine.

Instructions. Begin by preheating the oven to 475° F (246° C) and with cooking or baking spray, grease a 24 well mini muffin tin. Add the flour, the cornstarch, the baking soda, and the salt to a large bowl and whisk lightly to combine. Beat the egg in a smaller bowl with a whisk then add the oil, whisking both to combine.

Fry 5 or 6 loukoumades at a time until deep golden brown on all sides, about 3 minutes. Remove with a slotted spoon and drain on paper towels. Combine the honey and 225 ml of water in a saucepan, bring to a boil, and simmer for 3 minutes. Stir in the lemon juice and rosewater. Remove from the heat.
