Directions. Slice cheese into chunks 1/2″ x 1 1/2″ and freeze in a ziploc bag for at least 2 hours. When cheese is solidly frozen, preheat the oven to 375°F. Fit a cooling rack into a baking sheet and set aside. Open the package of bacon, then roll a chunk of cheese up in the bacon.

Roll into ten 1-1/4-in. balls. Wrap a bacon strip around each ball. Secure with a toothpick. In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a thermometer inserted into stuffing reads at least 160°. Drain on paper towels.

Brush with egg mixture. Top each with 1 1/2 tbsp grated cheese and the uncooked bacon. Cover with clean tea towel and set aside for 30 minutes or so in a warm place until it has risen by around 50% (Note 6). Preheat oven to 180C/350F. Bake for 20 to 25 minutes or until they are golden brown.
